Pork & Apple Puff Pastry

Ingredients (For a piece of pastry that serves 5):

  • 500g minced pork
  • 2 shallots, finely chopped (or 1 onion)
  • 150g cheddar cheese, diced.
  • 1 apple, finely diced.
  • 4 tbsp fresh parsley, finely chopped.
  • 375g puff pastry/ 1 packet frozen puff pastry
  • 2 eggs, beaten.

You will need a 30cmx25cm baking tray as well.

Instructions:

  • Roll your pastry into 40cmx30cm. Place the pastry over the tray so that it fully covers it and hangs over the edges.

Important note: It's okay to use slightly different shapes/sizes, but be sure to maintain the general structure of the pastry as seen in images below.

  • Then place in a cool place, until ready to use again below.
  • Preheat the oven to 200°C (fan)
  • Mix all the ingredients but only 3/4 of the egg thoroughly with hands in a bowl.
  • Get the puff pastry.
  • Put the mixture onto the pastry in a tunnel shape as seen in the photograph.
  • Brush the edges of the pastry with some of the remaining egg. Fold the pastry over and brush the rest of the egg over the pastry.
  • Bake the pastry for 20mins at 200°C then for 30 mins at 180°C. It is ready once the outside is a crispy brown.
  • *If you are unable to cover the mixture fully, you can cut off strips from the excess pastry on the top and bottom, and then place lengthways in the centre. See photos to the right/below.
